Spicy Miso Ramen

Spicy Miso Ramen

A nice, warm bowl of ramen just hits the spot especially when it’s all gloom and doom outside. Thankfully, we’ve got an easy Spicy Miso Ramen recipe that you can create from the comfort of home.

In Season 1, Episode 3 of Selena + Chef, the singer-songwriter teamed up with “Golden Girl of Wellness” Candice Kumai to create this comforting meal. Now, you can replicate it at home with simpler ingredients and a faster prep and cooking time with this recipe from Dishing Out Health.

Ingredients:

  • ¼ kg ground chicken or pork
  • 2 tbsp cooking oil
  • ¼ kg shiitake mushrooms, without stems
  • ½ cup onion, minced
  • 1 tbsp ginger, freshly grated
  • 3 tbsp white miso paste
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp hot chili oil
  • 6 cups chicken or vegetable broth
  • 2 packs dry ramen noodles
  • 1 cup sweet corn
  • 3 soft-boiled eggs, halved
  • Thinly sliced green onions for garnish
  • Toasted sesame seeds for garnish

Procedure:

  1. Heat a large pot over medium flame. Once hot, lightly grease and add your protein of choice. Cook for 4 to 5 minutes or until golden brown. Transfer the meat to a bowl and set aside.
  2. In the same pot, saute the mushrooms for 5 minutes or until golden and tender. Stir in the onion, ginger, and garlic and cook for 3 more minutes until aromatic.
  3. Stir in the miso paste, soy sauce, rice vinegar, and chili oil. Pour in the broth and bring to a boil. Lower heat and simmer over medium-low for 20 minutes.
  4. Bring the broth back to a boil and add the noodles, cooking for 3minutes. Stir in the cooked meat and sweet corn.
  5. Transfer the meat into bowls and top with soft-boiled eggs and garnish. Yum!

Seafood Gumbo

If you’re looking to experiment with different cuisines, why not try this unique Cajun dish?

Gumbo is a traditional stew popular in the American state of Louisiana. It’s a rich and flavorful soup/stew that utilizes okra as one of the main ingredients, and can be used with a variety of meats. The beauty of preparing and cooking gumbo is in its simplicity: it can all be created in one pot and doesn’t require any fancy cooking techniques to make it work.

Selena collaborated with renowned chef and award-winning author JJ Johnson to create his signature dish. Enjoy this hearty soup with a hot cup of rice (or two) with this recipe from Taste of Home.

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup canola oil
  • 4 cups chopped onion
  • 2 cups chopped celery
  • 2 cups chopped green pepper
  • 1 cup sliced green onions
  • 4 cups chicken broth
  • 8 cups water
  • 4 cups sliced okra
  • 2 tbsp paprika
  • 1 tbsp salt
  • 2 tsp oregano
  • 1 tsp ground black pepper
  • 6 cups small shrimp, rinsed and drained, or seafood of your choice
  • 1 cup minced fresh parsley
  • 2 tbsp Cajun seasoning

Procedure:

  1. Combine the flour and oil in a pot and cook over medium-high heat for 5 minutes, stirring constantly. Reduce the heat to medium and stir for 10 more minutes, or until the mixture is reddish brown.
  2. Add the chicken broth, water, okra, and green onions. Boil for 10 minutes until slightly tender. Season with salt, oregano, and pepper.
  3. Add shrimp and cook for about 5 minutes, then remove from heat and stir in Cajun seasoning.

Chicken Adobo

Of course, nothing beats classic homemade delights. This recipe for chicken adobo has some oyster sauce included for an added depth of flavor, which Selena created on Season 3 of her show while partnered with Fil-Canadian Chef Jordan Andino. This dish is perfect over a piping hot cup of rice!

Ingredients:

  • 2 tbsp vegetable oil
  • 4 chicken thighs, bone-in and skin on
  • 1 tsp black pepper
  • 4 garlic cloves, roughly chopped
  • ¼ cup oyster sauce
  • ½ cup soy sauce
  • 1½ cups sugar cane vinegar
  • 3 bay leaves

Procedure:

  1. In a large saucepan, add the oil and garlic for 10 seconds or until fragrant. Carefully add the chicken thighs and cook until caramelized on all sides, turning once. Season chicken with pepper.
  2. Add in oyster sauce and soy sauce, tossing to coat the chicken thoroughly. Cook for 2-3 minutes until fragrant and sauces start to caramelize to the bottom of the pan. Drizzle in sugar cane vinegar and bay leaves, stirring to release the caramelized bits on the bottom of the pan.
  3. Cover the pot and bring to a rolling boil for 5 minutes. Reduce heat to medium-low and cook covered for 30-40 minutes until chicken is tender.

  4. Bring the broth back to a boil and add the noodles, cooking for 3minutes. Stir in the cooked meat and sweet corn.
  5. Transfer the meat into bowls and top with soft-boiled eggs and garnish. Yum!
