Singkamas French Fries

The humble singkamas isn’t just a lumpia or salad staple. Now, you can effortlessly add more veggies to your or your kids’ diets with this delicious take on fries–and you can make them even healthier when you cook them in your air fryer!

Ingredients:

  • ¼ kilo singkamas, peeled and sliced into sticks
  • 1 tbsp olive oil
  • 1 tsp Paprika
  • Salt

Supplies:

  • Parchment paper

Procedure:

  1. Toss all the ingredients in a mixing bowl.
  2. Line your air fryer basket with parchment paper, then transfer the fries onto the basket.
  3. Air-fry for 25 minutes at 180°C/356°F. Shake the basket halfway through the cooking time to cook the singkamas evenly.
  4. Season with salt to taste.

Cha Gio

Vietnamese food is typically lauded for being healthy. After all, most of their dishes use fresh ingredients. mWell’s take on Vietnamese fried spring rolls can be a scrumptious side dish to a homemade bowl of pho or eaten by themselves for a yummy snack!

Ingredients:

  • 50 grams sotanghon (dried mung bean noodles)
  • 450 grams lean ground pork
  • 2 medium carrots, grated
  • ⅓ cup tenga ng daga (rehydrated wood ear mushrooms), chopped
  • ¼ cup shallots, finely chopped
  • 1 clove garlic, minced
  • 1 tsp. ginger, grated
  • 1 egg white
  • 1 tbsp fish sauce
  • 3 tsp sugar
  • 1 cup warm water
  • 20 dried rice paper wrappers (bahn trang)

Procedure:

  1. Soak the sotanghon in warm water for 30 minutes. Drain thoroughly and cut into ¼ inch pieces.
  2. Combine the noodles, pork, garlic, ginger, egg white, tenga ng daga, egg white, fish sauce, and 1 tsp of sugar in a large bowl. Mix well.
  3. In a deep plate or a large, shallow bowl, dissolve the remaining sugar in the water.
  4. Dip a piece of rice paper in the sugar water for about 5-10 seconds.
  5. Put a tablespoon of the filling in the center of the softened rice wrapper. Fold towards the center, covering the filling. Fold each edge, then roll up tightly. Repeat with the rest of your rice paper, soaking and filling each one individually.
  6. Heat about 2 cups of oil in a medium pot, then fry the spring rolls in small batches. Cook for about 5 to 6 minutes, or until golden brown.
  7. Serve with some fresh lettuce, cilantro, Thai basil, mint, and nuac cham for dipping. Delish!

Low-Carb Ensaymada Muffins

Ensaymada can be quite an indulgent snack because of its buttery and sugary goodness, but mWell’s take on this Filipino pastry only has 217 calories!

Ingredients:

  • 2 large eggs
  • ¼ cup shredded mozzarella
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 tsp Stevia

Procedure:

  1. Preheat your oven to 180°C/356°F.
  2. Put the mozzarella in a microwave-safe bowl. Microwave at 30-second intervals until the cheese is fully melted.
  3. Stir in the almond flour, baking powder, and Stevia. Mix until the dough is free of lumps.
  4. Blend in the eggs until smooth.
  5. Divide the mixture into a muffin pan. Once done, shake the pan lightly to fill any gaps.
  6. Bake the muffins for 10 to 12 minutes. Yummy!
